The 22-year-old joins Zara Bailey, Ellie Noble, Hannah Greenwood, Saoirse Noonan and Demi Lambourne in signing for the Hornets ahead of the 2026/27 campaign in the WSL 2.
A Welsh international, Poole won her first cap in a World Cup qualifier at home to Albania in April.
She steps up to the second tier having left last season’s FA Women’s National League Southern Premier Division runners-up Plymouth Argyle.
Poole scored 16 goals in 30 matches for the Devon club as they finished second behind the league-winning Golden Girls in the standings.
The forward started her career at Barry Town United before joining Cardiff City in 2020.
Impressing during three seasons in the Welsh capital, Poole scored an outstanding 37 goals - including back-to-back hat-tricks - in 45 appearances.
After leaving Cardiff, she spent a season each with Cheltenham Town and Oxford United.
Poole won Oxford’s 2024/25 golden boot, as well as their Players’ Player of the Season and Supporters’ Player of the Season awards during her time with the U's.
